The first time I tried making these brownies, I was in high school. They became an immediate hit with my family and friends. I loved that they were easy to make, but impressive enough that people noticed them, even among a spread of treats. The brownie bottom is fudgy and delicious, but the real show happens when you add the mint icing and the chocolate glaze. Just look at those layers!
These brownies are the perfect dessert. Seeing that they are green and minty, they do make the perfect addition to any St. Patrick’s Day celebration. But, you can make them for nearly any occasion. Let’s get started.

The nice thing about these brownies, is that they mix up quickly. You don’t even need an electric mixer for the brownie portion. I made these by hand in just a few minutes. Simply melt the butter in a large bowl, then mix in the sugar, vanilla, and eggs.
Add in the cocoa, flour, and baking powder. Mix until everything is blended well.
Pour the brownie batter into a greased 9×13″ baking pan.
Bake for 30-35 minutes, or until a toothpick comes out of the center clean.
Cool completely. While the brownies are cooling, mix together your mint frosting.
Combine 1/2 cup (1 stick) of room temperature butter, 2 2/3 cup powdered sugar, water, mint extract, and green food coloring. Mix together. Spread evenly over the now-cooled brownies. It should look something like this. I like to pop this into the fridge or freezer to get it a little cold before I add the chocolate glaze.
Next, prepare your chocolate glaze. Combine 6 tablespoons butter and 1 cup of semi-sweet chocolate chips in a microwave safe bowl. Microwave for one minute, and stir. The mixture should be melted. Stir together and add to the top of the mint frosting.
Pop the brownies back into the fridge. It usually takes about an hour for the chocolate to solidify again. After the chocolate sets up, cut the mint chocolate brownies and try not to eat too many. They are so good!

- Brownie Batter
- 1 cup butter
- 2 cups granulated sugar
- 1 teaspoon vanilla extract
- 4 eggs
- 3/4 cup cocoa powder
- 1 cup flour
- 1/2 teaspoon baking powder
- Mint Frosting
- 1/2 cup butter
- 2 2/3 cup powdered sugar
- 1 tablespoon plus 1 teaspoon water
- 1 teaspoon mint extract
- 4 drops green food coloring
- Chocolate Glaze
- 6 tablespoons butter
- 1 cup semi-sweet chocolate chips
Instructions
- Place 1 cup butter into a microwave-safe bowl. Microwave until melted (approximately 1 minute).
- Mix granulated sugar, vanilla extract, and 4 eggs into the melted butter.
- Add cocoa powder, flour, and baking powder to the wet ingredients. Mix well.
- Spread brownie batter into a greased 9×13 inch pan.
- Bake for 30-35 minutes at 350 Degrees Fahrenheit.
- Cool brownies completely.
- While the brownies are cooling, combine the ingredients for the mint frosting into a large bowl.
- Mix well.
- Spread over cooled brownies. Place in fridge.
- Melt 6 tablespoons butter with 1 cup semi-sweet chocolate chips in the microwave (approximately 1 minute).
- Mix well and spread over the mint frosting mixture.
- Place back into the refrigerator for about 1 hour, or until the chocolate sets up. Cut and serve.
- Refrigerate leftovers.
